Spicy seekh kebabs

INGREDIENTS : Mince – 1 kg Fried   gram flour   – 1 tbsp Green   chillies – 3 Fresh coriander – 2 tbsp Onion – 1 medium size Red chilli powder – 2 tbsp Fried brown onion – 1 tbsp Salt – 1 tbsp Garam masala   powder – 1 tsp Nutmeg powder – ¼ tsp Mace   powder – ¼ tsp Green   cardamom powder – ¼ tsp Ginger garlic paste – 1 tbsp INSTRUCTIONS In a grinder, put onion and grind, then add mince, green chillies, salt, fresh coriander, garam masala powder, fried brown onion, red chilli powder, mace powder, nutmeg powder, cardamom powder and ginger garlic paste, grind and make smooth paste. Now add gram flour and mix well. Take out in a bowl and mix with hands. Leave for 30 minutes, then make kebabs and skew on skewers. Grill, BBQ, cook on gas burner or fry in frying pan on low heat until done.

Vegetable Samosa

INGREDIENTS  500 gm potatoes For the dough : 500 gm wheat flour 50 ml  ghee  or oil 5 gm carrom seeds Salt Water Oil for deep frying the  samosas For the tempering : 50 ml  ghee or oil that you pefer  5 gm cumin seeds 5 gm turmeric powder 3 gm red chilli powder 10 gm green chillies 10 gm ginger 10 gm garlic 1 lime 10 gm coriander leaves Salt 100 gm green peas 10 gm  chaat masala  powder 5 gm fennel seeds 5 gm  garam masala 25 gm chopped cashew nuts INSTRUCTIONS  Cook the potatoes until soft, peel and mash. Chop the green chillies, garlic, ginger and the coriander leaves. Mix all the ingredients for the dough except water and rub thoroughly. Sprinkle water and make a hard dough. Gulab Jamun

Things You Need For Gulab Jamun Dried whole milk 1/2 Kg Egg 1 Sugar 1 tbsp Baking powder 1/2 tsp Refined flour 3 tbsp Semolina 3 tbsp (sooji) Clarified butter for frying + 2 tbsp For Syrup: Sugar 1/2 Kg Water 2 cups Cardamom powder 1/2 tsp Sterling silver leaves, almonds and pistachios for garnishing Mix all Gulab jaman ingredients and knead into dough Dried whole milk 1/2 Kg Egg 1 Sugar 1 tbsp Baking powder 1/2 tsp Refined flour 3 tbsp Semolina 3 tbsp Clarified butter for frying + 2 tbsp Make into small balls. Heat clarified butter in wok and fry till golden. Cook syrup ingredients in a pot till it thickens. Sugar 1/2 Kg Water 2 cups Cardamom powder 1/2 tsp Sterling silver leaves, almonds and pistachios for garnishing Remove from flame, add jamans in the syrup, and leave for ½ hour When jamans have absorbed the syrub, put them in a dish. Garnish with silver leaves, almonds and pistachios, and serve.

Lassi (Desi sweet drink)

THINGS YOU NEED  Yogurt ½ kg Milk ½ kg Sugar ½ cup Ice as required  Instructions  In a blender jug add yogurt, milk, sugar and ice and blend well. Now take out the lassi in glass and serve.

THINGS YOU NEED 8 skinless, boneless chicken thighs  For the marinade: 1/2 cup malt vinegar 1/4 cup plain yogurt 1 Tbsp vegetable oil Salt and pepper to taste 1/4 tsp freshly ground cardamom 1 tsp all spice For the sauce: 1/2 cup  tahini 1/4 cup plain yogurt 1/2 tsp minced garlic 2 Tbsp lemon juice 1 Tbsp olive oil 1 Tbsp chopped fresh parsley Salt and pepper to taste For plating: 4 medium tomatoes, thinly sliced 1/2 cup sliced onion 4 cups shredded lettuce 8 pita bread rounds  INSTRUCTIONS  In a glass baking dish, mix together the malt vinegar, 1/4 cup yogurt, vegetable oil, mixed spice, cardamom, salt and pepper. Place the chicken thighs into the mixture and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight. Preheat the oven to 350 degrees F (175 degrees C). Ingredients 500 gm of flour 15 gm of ajwain 1/4 cup of oil Oil for frying 20 gm of salt 100 gm of cottage cheese 50 gm of Cheddar cheese 50 gm of jalapeno INSTRUCTIONS Sieve flour, put oil and rub with your palm.Then add salt, Ajwain, black onion seed and mix well.Make a well in the center, add enough water and knead into stiff dough. Make small size of balls and keep a side.Heat oil, add ajwain and cottage cheese. Cooke for some time with salt and red chili powder.Keep this mixture for cooling. Now add grated cheddar cheese and chopped jalapeno.Stuffed this mixture in inside the balls and flatten with your palm. Deep fry and serve hot

Cook Time:  30 minutes things we need : 2 Tbsp refined oil 2 bread slices 100 ml milk 2 Tbsp sugar free Saffron, a pinch 25 gms raisins 25 gms cashew nuts INSTRUCTIONS  In a pan, fry bread slice with little bit of oil and keep it on the plate.
